CREAMY GARLIC WILD SALMON

1/2 cup Cashews
1/2 cup Water
1/4 cup Nutritional Yeast
1/4 tsp Salt
Pinch of Pepper
2 tsp Extra Virgin Olive Oil
2 x 150g Wild Salmon Fillets, dried with paper towel
2 Garlic Cloves, minced
10 Cherry Tomatoes
1 tsp Italian Herbs
1 handful Spinach
1. Blitz cashews, water, nutritional yeast and seasonings in a blender until smooth. Set aside.
2. Heat a medium frying pan on medium heat until pan is hot, approximately 1 minute.
3. Add half the oil and allow to coat the pan.
4. Sprinkle both side of the salmon with salt and add to pan skin side down, allow to sear until lightly crisped, approximately three minutes on each side.
5. Meanwhile, heat remaining oil in a separate small frying pan, add garlic and cook until fragrant, approximately 2 minutes.
6. Add cherry tomatoes and Italian herbs to small frying pan, cook until tomatoes have softened, approximately 3 minutes.
7. Add blitzed sauce mixture and spinach, allowing to wilt and warm (add extra water is a thinner consistency is desired).
8. Serve salmon topped with sauce, tomatoes and spinach.
