Porterhouse—also known as sirloin or striploin—runs along the back of the animal behind the scotch fillet. It has less marbling than the rib section but develops a deeper, more complex flavour from the harder-working muscle. It holds up better to marinades and bold seasonings than more delicate cuts.
At approximately 350g it suits one generous serve. Cook hot and fast to your preferred doneness, rest well, and slice. Like all ButcherCrowd beef, vacuum sealed and rapidly frozen.
