Cut from the same loin section as the chops but without the bone—clean, lean, and quick-cooking. The lack of bone means even thickness, which makes cooking time predictable.
High heat, three to four minutes per side, rest before serving. Works well with apple, mustard, or herb-based sauces. Like all ButcherCrowd pork, vacuum sealed and rapidly frozen.
