Pork belly is one of the most forgiving cuts to cook—the generous fat layer protects the meat during a long, slow cook and renders down to produce a self-basting, tender result. The skin, when dried well and cooked at high heat, produces proper crackling.
For best crackling: score the skin, dry brine with salt overnight, and start at high heat before dropping to low for the cook. Like all ButcherCrowd pork, vacuum sealed and rapidly frozen.
