The lamb rump sits at the top of the back leg—a compact, tender muscle that suits quick roasting without the commitment of a full leg or shoulder. At approximately 280g it is sized for one generous serve or two smaller portions.
Sear first in a hot oven-proof pan, then finish in the oven at 200C for 12-18 minutes depending on preferred doneness. Rest well before slicing. Like all ButcherCrowd lamb, vacuum sealed and rapidly frozen.
