Loin chops are the lamb equivalent of a T-bone—cut across the loin they contain both the loin muscle and the tenderloin in a single portion, separated by the bone. The bone adds flavour to the cook and helps the meat retain moisture.
At approximately 300g they are sized for a quick weeknight cook or a generous single serve. The fat cap can be scored to stop curling on a hot pan. Like all ButcherCrowd lamb, vacuum sealed and rapidly frozen.
