The shoulder is one of the most flavourful cuts on the lamb—a heavily worked muscle with generous marbling and connective tissue that slowly breaks down over a long roast. The boneless roll makes it practical: tie it, season it generously, and leave it in a low oven for several hours.
At approximately 1.6kg it is sized for a proper Sunday roast. Pull-apart tender with the right rest time. Like all ButcherCrowd lamb, vacuum sealed and rapidly frozen.
