Eye fillet comes from the psoas muscle—a muscle that does almost no work during the animal’s life, which is exactly why it is so tender. There is no connective tissue to break down and no coarse grain to work against. What you get is a clean, fine-textured steak that responds to simple cooking: a hot pan, two minutes a side, and a proper rest.
Two steaks at approximately 175g each—right for a dinner for two or a generous single serve. Lean by nature, so do not overcook: medium-rare is where this cut performs best.
