Lamb diced from the shoulder or leg carries enough connective tissue to reward slow cooking—the collagen converts to gelatin over a long braise, producing a rich, sticky sauce that works beautifully with North African spices, fresh herbs, or classic tomato-based sauces.
At approximately 450g it is sized for a dinner for two to three. Like all ButcherCrowd lamb, vacuum sealed and rapidly frozen without added ingredients.
