Diced beef is cut from the working muscles—typically chuck or blade—which means high collagen content that converts to gelatin over a long, gentle cook. That is what gives a proper stew or curry its body and depth; you cannot rush it with a leaner cut.
At 500g it is practical for family dinners with leftovers, or a weekend batch cook that sets you up for the week. Vacuum sealed and rapidly frozen.
