Free-range chicken breast, crumbed and ready to cook—two generous schnitzels at approximately 200g each. The breast has been flattened to an even thickness, which is what allows the whole schnitzel to cook evenly without the edges drying out before the centre is cooked through.
Pan-fry in a little oil over medium heat for four to five minutes per side, or bake at 200C for 18-22 minutes. Works with a squeeze of lemon, a sauce, or in a schnitzel sandwich.
