Short ribs carry the same generous marbling as the rib rack but cut individually—which makes them practical for smaller cooks or portion-controlled servings. The bone adds flavour to the braising liquid as it cooks.
Best results come from cooking low and slow until the meat pulls cleanly from the bone. At approximately 750g, works well for two to three serves. Vacuum sealed and rapidly frozen.
