Oyster blade comes from the shoulder—a heavily worked muscle with a natural seam of collagen running through the centre. Slow cook it and that seam melts, adding body to the sauce; roast it hot and fast and you get a lean, flavourful result with a different texture entirely.
At approximately 800g it suits both methods—a weekend braise or a mid-week roast. Vacuum sealed and rapidly frozen without added ingredients.
