Beef cheeks are the masseter muscle—constantly at work, which means high collagen content and intense flavour. That collagen converts to a rich, silky gelatin during a slow braise, producing a sauce that you cannot achieve any other way.
At approximately 700g, well suited for a shared dinner or weekend batch cook. Works beautifully with red wine, tomato, or Asian-style braises. Vacuum sealed and rapidly frozen.
