Brisket comes from the chest—one of the most worked muscles on the animal—which is exactly why it needs long, gentle heat. The dense connective tissue slowly converts to gelatin, producing a self-basting, pull-apart result that shorter cuts cannot replicate.
At approximately 1.5kg it is sized for a proper cook: whole in a slow cooker, in a covered oven braise, or on the BBQ or smoker low and slow. Like all ButcherCrowd beef, vacuum sealed and rapidly frozen.
