Southern bluefin tuna is one of Australia’s premium fish species—a rich, meaty flesh with a deep colour and robust flavour that suits a sear-and-serve approach rather than cooking through. The centre should remain rare to medium-rare for best results.
Season simply and sear over very high heat for 60-90 seconds per side. Rest briefly and serve promptly—tuna at room temperature is very different from tuna fresh from the pan.
