Australian wild-caught premium otoro tuna sashimi (~100g) — the most prized cut of southern bluefin tuna, taken from the fatty belly of the fish. Deeply marbled, rich in flavour and extraordinarily tender, otoro is the cut traditionally reserved for high-end sushi restaurants. Best enjoyed raw, straight from the pack, served simply with soy sauce, fresh wasabi and pickled ginger.

Southern bluefin tuna otoro comes from the belly of the fish — the section with the highest fat content and the most intense marbling. Where standard tuna cuts are firm and meaty, otoro is something else entirely: soft, yielding and rich in a way that dissolves rather than chews.
Defrost overnight in the fridge. Slice across the grain with a sharp knife and serve straight away. No cooking, no searing, no heat of any kind — otoro served raw is the point, not a compromise.
Keep it simple: a small dish of soy, a little wasabi on the side, or a few drops of ponzu. The fish does everything else.
