A whole pasture-raised bird—oven-ready for a classic roast, spatchcock, poaching, or slow cooker. At approximately 1.7kg it is sized for a family of three to four as a main.
For roasting: dry brine overnight with salt under and over the skin, roast at 200C for 60-75 minutes, rest for 15 minutes. The resting step is not optional—it redistributes the juices throughout the bird. Vacuum sealed and rapidly frozen.
