Sockeye is among the most flavourful of the wild Pacific salmon species—deeply coloured from its natural diet, with a firmer texture and more pronounced flavour than farmed Atlantic salmon. It suits simple cooking: a hot pan, skin down, and a short rest.
Cook skin-side down over medium-high heat for most of the time, then flip briefly to finish. The skin crisps well and is worth eating. Rapidly frozen at peak freshness to preserve quality.
